Vancouver's Best Pasta

Vancouver's Best Pasta

I am a professional. I have eaten a lot of pasta.

But Vancouver, Washington, is not Rome, and that is precisely the point. From the theatrical cheese-wheel spectacle at DOSALAS to the counter-service soul of Grassa, this city’s carb game is a glorious, unpretentious paradox.

I have watched dough being rolled by hand and I have nearly licked a bowl of bolognese clean at Nostra Tavola. My standards are high; my belt is flexible.

Consider this your fork. Now, go get lost in the sauce.

Excellent, attentive service

Nostra Tavola is where I start my pasta pilgrimage. The burrata appetizer arrives as a soft cloud, pooling with pesto that tastes like summer. I followed it with the beet salad, earthy and bright. Then came the bolognese. Rich. Slow. Deeply satisfying. The sauce clung to each ribbon of pasta like it had been waiting for me. Service was attentive without hovering. I nearly licked the bowl. The marionberry cheesecake ended things on a sweet, tart note. I left planning my return. This is comfort food, elevated. I felt at home. I felt full. I felt grateful.

Pizzeria La Sorrentina surprised me. I came for pizza, but the pasta won me over. Authentic Italian dishes, simple and true. The pepperoni pizza had a perfect char, but the real star was the texture. Naples-style crust, airy and crisp. The artwork on the walls, whimsical pieces by Eleni Phillips, added charm. I ordered a pasta special too. Handmade. Delicate. The sauce was bright and balanced. This place understands restraint. Nothing overdone. Everything purposeful. I sat by the window and watched rain fall. Each bite tasted like a small celebration. I will be back for that pizza. And that pasta.

NYC Pizzeria has been at it for nineteen years. I respect that longevity. The complimentary pizza knots arrived warm, brushed with garlic butter. I ordered the Kamal's Special. An Indian-inspired pizza, surprisingly harmonious. But I was here for pasta. Their lasagna was ample, layered with ricotta and a meat sauce that tasted like family recipes. The alfredo was creamy, not heavy. The cannoli? Equally delicious. This is a neighborhood spot that knows its crowd. Service was quick. The room felt lived-in. I left satisfied, the way you do after a meal that asks nothing of you but appetite.

Hudson's Bar and Grill offers more than bar food. I sat outside, quick and friendly service. The goat cheese omelette was generous, fluffy, with tangy cheese melting through. A brunch surprise. Their signature Revolver cocktail arrived bold and citrusy. I also tried their pasta special. Simple. Well-executed. The staff remembered my name when they brought the check. That attention to detail matters. This is the kind of place where you can linger. I watched the street life and sipped my coffee. Sometimes the best meals are the unplanned ones. Hudson's made my afternoon better.

El Gaucho Vancouver is an experience. Impeccable service, from the moment I walked in. The steaks are famous, perfectly cooked. But their pasta deserves attention. I started with the tableside Caesar, a theatrical toss that delighted. Then the sea bass. Buttery, delicate, flaking at a touch. The lobster mash was rich, a decadent side. Every detail felt considered, from the lighting to the silverware. This is old-school elegance. I felt pampered. The pasta course, a simple tagliatelle, was refined. This is a place for celebrations. I left feeling like I had dined somewhere special. Because I had.

The Cove Restaurant sits by the water. Lovely riverside venue, serene. Our server Antonio was attentive, intuitive. He recommended the wood-fired salmon. Smoky. Flaky. Perfectly charred. I paired it with their seafood bucatini, a medley of clams and shrimp in a light broth. The seafood chowder was creamy and comforting. I could have stopped there, but I didn't. Everything felt fresh. The view added to the meal. I watched boats drift by as I ate. This is Vancouver dining at its most relaxed. A gem by the shore. I will return when I need to breathe.

Justa Pasta Co. is all about the basics done right. The lasagna was excellent, layers of pasta, meat, and cheese in perfect proportion. The alfredo was silky, rich without being greasy. They offer fresh pasta to go, which I appreciated. I grabbed some for later. The staff were quick and friendly. The space was bright and clean. Even the restroom was spotless. There is a heated patio out back, worth a visit on a cool evening. This is no-frills pasta that delivers. I left with a full belly and a bag of homemade ravioli. What more could I want?

DOSALAS brings a Latin twist to pasta. The table-side alfredo was spectacular, prepared with flourish right at my table. The cheese wheel added drama and flavor. The staff were warm and professional, guiding me through the menu. Their recommendations were exceptional. I tried the seafood pasta, a bold, spicy creation. The service felt personal. They even noted my birthday with a small dessert. The room was lively, filled with laughter. Pasta here is an event. I left impressed, full, and happy. This is where unexpected combinations become memorable meals. I am still thinking about that alfredo.

Tartuca is the best pasta spot in Vancouver. I say that without hesitation. Their signature dish, a slow-cooked ragù, was the best I have ever eaten. Tender meat, silky sauce, perfectly al dente noodles. Do not miss this place. The pizza is fantastic too, pillowy crust with charred edges. I came for pasta, stayed for the whole experience. The service was attentive but not intrusive. The room was warm and inviting. I have had many meals in this city. This one stands above. Years from now, I will still remember this dinner. That is the mark of greatness.

Grassa, again. I could not resist returning. The handmade pasta is crafted fresh daily. Watching it made live is captivating. This time I tried their special, a mushroom ragù over pappardelle. Earthy, rich, satisfying. The casual counter-service vibe means no waiting around. You eat, you enjoy, you leave. But you never forget. The mac and cheese with pork belly remains a favorite. The vodka sauce fusilli is still shining. I came twice in one week. That says everything. Grassa is proof that casual can be exceptional. I will be back a third time. Soon.

Grassa is a revelation. Handmade pasta served fast, like a casual stop that overdelivers. I watched them roll dough through the machine near the counter. Fresh. Alive. The mac and cheese with pork belly was decadent, creamy, with that salty bite. The fusilli in vodka sauce shone, each curl catching the silky tomato cream. Prices were reasonable. The staff were friendly, even when the line grew. This is pasta for the people. No pretension. Just craft. I ate at the counter, watched the kitchen work, and felt the energy. Vancouver, take note. This is how it is done. Simple. Honest. Delicious.

Campana earns every bit of praise. The cavatelli was the best pasta dish I have had in months. Small, chewy shells in a sauce that made me pause. The tortelli di zucca was unforgettable. Sweet squash, buttery sage, a hint of nutmeg. Each piece a tiny parcel of autumnal warmth. I even saved room for the cannoli. Crisp shell, rich ricotta. Worth reserving in advance. The dining room hummed with quiet appreciation. This is a place that respects ingredients and tradition. I found myself smiling without reason. That is the mark of truly great food. Campana has my heart.
